My aunt is the only person in the world who loves tacos more than me. She coined the “Canadian Taco” back in the ’80s, well, not legitimately “coined” it but you know what I mean. After years of begging, I finally got the permission to share this brilliant recipe with my friends, and that includes you!
First I’ll lay out a list of what you’ll need and then describe how you’ll prepare them. Ingredients:
- Regular soft or hard taco shells/wraps.
- Thick sliced Canadian bacon.
- Avocado oil.
- Blue cheese (preferably Dragon’s Breath Blue because it’s Canadian).
- Free run eggs.
Notes:If you’re not in Canada you don’t necessarily need Canadian products, but it would make your finished results a lot tastier if you did! Amounts and measurements do not matter, it all depends on preference and proportions.
- You’ll need two medium sized pans. Set them both on the element at medium heat. Throw bacon on one and a splash of avocado oil on the other.
- On the pan with avocado oil, place a heaping of minced potatoes and begin to fry them as if you were making hash browns.
- Once the bacon is crispy, push it to the side of the pan, turn the heat down to medium low and cook your eggs, scrambled style, in the bacon grease. Mmmmm.
- Turn oven onto a low setting, like 100-175 degrees Celsius to begin warming taco shells.
- Place cooked bacon, eggs and potatoes in separate serving dishes. As well as grated blue cheese and minced kale in another dish
- Pull out heated tacos and you’re ready to serve! Don’t forget the salsa!
